    RECIPE
    Japanese rice wine 150 g
    Mirin (sweet cooking sake) 125 g
    Boil and remove the alcohol. Flaming the alcohol makes it visible and easier to check, but please use fire with care.
    Soy sauce 20 g
    Salt 1 g
    Ginger 5 g
    Garlic 5 g
    Plating style example:
    Cauliflower purée
    Yaki Nasu (grilled and marinated eggplant) please check another video.
    Beef Tataki
    Sesame seed dressing
    Grated hazelnuts

    Best tataki video i have ever seen. Nice technique shown. Can a little bit of horseradish be used instead of hazelnuts?

    If making at home don’t have open fire like stove will pan searing be too slow to evenly char without cooking the inside?

      Yes sake is Japanese rice wine. If you can't get it, try using red wine instead. It tastes a little different, but I think it's delicious. :)
